Ouka High School, Mie Prefecture


Ouka High School is a general high school dispensing general education, environmental sciences, and food preparation course. 
The "Mago-no-mise", opened on October 26, 2002, is a restaurant located in Gokatsura pond Furusato-mura that was developed through cooperation between Ouka High School, Furusato-mura, and Taki-cho (industry, government, and academia). The restaurant is a cooking training facility managed by students who are enrolled in the cooking course at Ouka High School. Through the cooperation, ingredients are provided by the Gokatsura pond Furusato-mura and the "Obacha o mise" (facility operated directly with local agricultural produce).
This “unique initiative”, which is unusual throughout Japan, has contributed to regional vitalization, and has received many awards and yielded many related books. In addition, a television drama modelled on their efforts called ‘High School Restaurant’ was broadcasted from May to July 2011. Purchase of the ingredients, preparation of the food, service, and accounting are all performed by the students, and the school has won several cooking competitions throughout Japan.

Born in 1960, he is the grandson of Mr. Yuki Teiichi, the founder of "Kitcho".
He started to train himself earnestly when he was 20 years old, and acquired the essence of cooking from his grandfather Teiichi Yuki. Following training experience in Koraibashi Kitcho and Tokyo kitcho, he was assigned to work at the main restaurant in Arashiyama, Kyoto, where he has been working as the executive chef since 1995.

He was appointed the position of president and representative director of Kyoto Kitcho Co. Ltd. He continues to challenge himself to present the vast variety of Japanese dishes in a contemporary way while retaining tradition.

He has been invited twice to the "Salon del Gusto" food festival hosted by the Italian slow food association. He also worked as an official adviser of the Kyoto slow food association.

January 18-20, 2005
He was the first selected from the Japanese food industry and invited to join top chefs from around the world at the "3rd international summit of gastronomy" (Madrid Fusion) held in Madrid, Spain.

November 1-3, 2007
He participated at the conference “The Rise of Asia” held in CIA California, USA. He presented Japanese cuisine.

July 21, 2008
He was invited to the “New Frontiers of Taste: Delightful Symposium” held in San Francisco, USA, by the Great Taste Information Centre.

July 29, 2008
He was invited to the “James Beard Foundation Masterpiece Dining” held in New York. The James Beard Foundation is the most prestigious group in the American food industry, and Kunio Tokuoka was the first Japanese to introduce dishes as a cook of "master piece dining". In addition, he is the first Japanese to have their chef coat signed by James Beard.

February 9-11, 2009
He represented Japan in the “Tokyo Taste- The World Summit of Gastronomy 2009”. He presented dishes embracing the theme “Delightful, Fragrance and Texture”.

March 7, 2009
He was invited to the "Great Taste Summit in London" held in London, England. On this day he presented a "pure risotto" using ingredients from England.

He was appointed president and representative director of Kyoto Kitcho Co. Ltd.

In 2009, 2010, 2011, 2012, 2014, and 2015, the Arashiyama restaurant was awarded 3 stars, and the Hana Kitcho restaurant awarded 1 star in the Kyoto, Osaka, and Kobe Michelin Guide by Nihon Michelin Tire Co. Ltd.

2010: Invited to the “World of Flavor Conference & Festival” that was held from the 4th to the 6th of November.
2012: The Toyako location was awarded two stars by the Michelin Guide Hokkaido.
2014: Invited to the UNESCO Intangible Cultural Asset Registration France Celebration Banquet
2014: Awarded the Beruta Cavalieri in Torino, Italy.

(Publications) In 2007, he published “Spring Dining Table” in February, “Summer Dining Table” in May, “Fall Dining Table” in August, and “Winter Dining Table” in November. In 2009, he published “Distinguishing Delicious Vegetables” in May, and “Arashiyama Kitcho Men’s Kitchen” in December, with Kazuo Nishimura, who is a leader in environmentally sustainable agriculture. In 2010, he published his first English book “Kitcho” through Kodansha International. In September of the same year, he published “The Beauties Of Nature Become Everyone’s Cuisine” through Gakuseisha, and then “Kyoto Kitcho Business Manners” through PHP Interface in October. He has also published “Snacks That Go With Alcohol” and “Four Seasons Dining Table Paperback Edition” through Bunshun. In 2013, he published “Building The Japanese Restaurant ‘Kitcho’ Over A Lifetime: Watching His Grandfather, Yuki Teiichi, Devote His Life To Japanese Cuisine And Tea Ceremonies, What Did Grandson Kunio Tokuoka Learn?”.

1947: Born in Yokkaichi City
1971: Married Hiroshi Shimizu of Suigetsu Kiln.
Received ceramic arts training from the second and third artists of Suigetsu.
1989: Honored with dish illustration training from Toka Yamada.
1991: Honored with dish illustration training from Tatsumi Nozaki.
During that time, she painted a small teapot for Suigetsu.
2003: Held her first illustrated tea bowl exhibition, in which she signed the bowls as Kishiyo for the first time, at Kyukyoanhayata.
2006: Honored to donate a tea bowl entitled “A Chart Of The Ise Pilgrimage” to Ise Grand Shrine in August.
2007: An illustrated unglazed porcelain exhibition was held in honor of her 60th birthday at Kyukyoanhayata.
2010: An illustrated unglazed porcelain exhibition featuring illustrations of her hometown was held at Kyukyoanhayata.
Her illustrated porcelain dish “Like Autumn” was used as a memento for award winners at the COP 10 International Conference (annually thereafter).
2012: Honored to donate an illustrate unglazed porcelain tea bowl in honor of the 62nd Reconstruction Of Ise Grand Shrine.
2013: Held an illustrated unglazed porcelain dish exhibition depicting the reconstruction and Japan’s four seasons at Kyukyoanhayata in January.
2015: An exhibition entitled “Shimizu Suigetsu Parent And Child Exhibition: Kihsiyo, Jun, And Shio Suigetsu” in the special fine arts gallery of the Mitsukoshi Nipponbashi location.
